Old-Fashioned Banana Oat Cookies

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2 bananas)
1 3/4 cups rolled oats
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in the egg and vanilla extract until well combined.
5. Stir in the mashed bananas until incorporated.
6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
7. Fold in the oats until evenly distributed throughout the dough.
8. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
9. Bake for 10-12 minutes or until the edges are golden brown.
10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 5 days.
Reheating
Enjoy at room temperature or microwave for 10-15 seconds to regain softness.
