Oatmeal Honey Nut Cookies

Ingredients

1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
1/4 cup honey
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 cups rolled oats
1 cup chopped mixed nuts (walnuts, pecans, almonds)
1/2 cup raisins
1/2 cup chopped dried apricots

Instructions

1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream together the butter, brown sugar, granulated sugar, and honey until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
5. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition.
6. Stir in the oats, mixed nuts, raisins, and dried apricots until evenly distributed.
7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to one week.

Reheating

To reheat, microwave cookies for 10-15 seconds or warm in a 300°F (150°C) oven for 3-5 minutes.
