No-Bake Almond Oatmeal Cookies

Ingredients

1 1/2 cups old-fashioned oats
3/4 cup almond butter
1/2 cup honey
1/4 cup unsweetened cocoa powder
1/4 teaspoon vanilla extract
1/4 teaspoon sea salt
1/4 cup sliced almonds
1/4 cup mini chocolate chips

Instructions

1. In a medium-sized bowl, combine almond butter, honey, cocoa powder, vanilla extract, and sea salt. Mix until smooth.
2. Add old-fashioned oats and sliced almonds to the mixture and stir until well combined.
3. Gently fold in the mini chocolate chips.
4. Using a tablespoon, scoop mixture and form into balls. Flatten slightly for a cookie shape and place on a parchment-lined tray.
5. Refrigerate for at least 30 minutes to set before serving.

Storage

Store cookies in an airtight container in the refrigerator for up to 1 week.

Reheating

Remove cookies from the refrigerator and let them sit at room temperature for 10-15 minutes before serving.
