Ingredients
2 lbs fresh mussels
2 tbsp unsalted butter
2 shallots, finely chopped
3 cloves garlic, minced
1 cup dry white wine
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Lemon wedges for serving
Instructions
1. Clean the mussels by scrubbing the shells and removing the beards; discard any mussels that remain open when tapped.
2. In a large pot, melt the butter over medium heat. Add the shallots and garlic, sautéing until soft and fragrant, about 2 minutes.
3. Pour in the white wine and bring to a simmer.
4. Add the cleaned mussels to the pot. Cover and steam until the mussels open, about 5-7 minutes, shaking the pot occasionally.
5. Discard any mussels that do not open.
6. Stir in the chopped parsley and season with salt and pepper.
7. Serve immediately with lemon wedges and fries.
Storage
Store leftover mussels in an airtight container in the refrigerator for up to 2 days.
Reheating
To reheat, place mussels in a covered pot over low heat for 5-7 minutes until warmed through, or microwave in a covered dish for 1-2 minutes.
