Moroccan Chickpea Stew

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp paprika
1/4 tsp cayenne pepper
2 cans (15 oz each) chickpeas, drained and rinsed
1 can (14 oz) diced tomatoes
2 cups vegetable broth
1 cup chopped carrots
1 cup chopped bell peppers
1/2 cup dried apricots, chopped
Salt and pepper to taste
1/4 cup chopped fresh cilantro for garnish
1 lemon, cut into wedges for serving
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, sauté until the onion is translucent, about 5 minutes.
3. Stir in the cumin, coriander, cinnamon, paprika, and cayenne pepper, and cook for another minute until fragrant.
4. Add the chickpeas, diced tomatoes, vegetable broth, carrots, bell peppers, and apricots. Stir well to combine.
5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, stirring occasionally, until the vegetables are tender.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh cilantro and a lemon wedge on the side.
Storage
Store the stew in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat the stew gently on the stove over medium heat, stirring occasionally until warmed through.
