Microwave Baked Potato

Ingredients

1 large russet potato
1 tbsp butter
2 tbsp shredded cheddar cheese
2 tbsp sour cream
1 tbsp chopped chives
Salt and pepper to taste

Instructions

1. Wash the potato thoroughly and pat dry.
2. Pierce the potato several times with a fork to allow steam to escape.
3. Place the potato on a microwave-safe plate.
4. Microwave on high for 5 minutes.
5. Turn the potato over and microwave for an additional 3-5 minutes, until tender.
6. Carefully remove from the microwave (it will be hot).
7. Slice the potato open lengthwise and fluff the insides with a fork.
8. Add butter, cheese, sour cream, and chives. Season with salt and pepper, then serve.

Storage

Store any leftover baked potato in an airtight container in the refrigerator for up to 3 days.
