Ingredients

2 lbs ground beef
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups shredded cheddar cheese
2 cups tortilla chips, crushed
1 tbsp olive oil
2 tsp ground cumin
1 tsp chili powder
Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium heat and sauté the onions and garlic until the onions are translucent.
3. Add the ground beef to the skillet and cook until browned, stirring occasionally.
4. Stir in red and green bell peppers, cooking for an additional 3-4 minutes until slightly softened.
5. Mix in black beans, corn, diced tomatoes with green chilies, cumin, chili powder, salt, and pepper, and let simmer for 10 minutes.
6. Transfer the mixture into a 9x13 inch baking dish and top with shredded cheese and crushed tortilla chips.
7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
8. Allow the casserole to cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for about 10-15 minutes, or until heated through.
