Ingredients
2 cups cherry tomatoes (halved)
1 large cucumber (sliced)
1 small red onion (thinly sliced)
1/2 cup feta cheese (crumbled)
1/4 cup kalamata olives (pitted and sliced)
2 tbsp fresh parsley (chopped)
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
Instructions
1. In a large bowl, combine the halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
2. Add the crumbled feta cheese and sliced kalamata olives to the bowl.
3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
4. Pour the dressing over the salad and gently toss to combine.
