Ingredients

1 cup quinoa
2 cups vegetable broth
1 tablespoon olive oil
1 small onion, chopped
2 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1/2 cup kalamata olives, sliced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil for garnish

Instructions

1. Rinse the quinoa under cold water.
2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add the quinoa and vegetable broth to the skillet, bring to a boil, then reduce heat to low and cover.
5. Simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
6. Stir in sun-dried tomatoes, kalamata olives, cherry tomatoes, and oregano. Cook for another 5 minutes until heated through.
7. Remove from heat and stir in crumbled feta cheese. Season with salt and pepper to taste.
8. Garnish with fresh basil before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over medium heat with a splash of water, stirring occasionally until heated through.
