Mediterranean Quinoa Salad

Ingredients
1 cup quinoa
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions
1. Rinse the quinoa under cold water and drain.
2. In a medium saucepan, combine quinoa and water, bring to a boil.
3. Reduce heat to low, cover, and simmer for 15 minutes, until water is absorbed.
4. Remove from heat and let quinoa cool.
5. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, olives, feta cheese, red onion, and parsley.
6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
7. Drizzle the dressing over the salad and toss gently to combine.
8. Serve immediately or chill in the refrigerator for at least 30 minutes to enhance flavors.
Storage
Store in an airtight container in the refrigerator for up to 3 days.

Best served cold, no reheating required.
