Ingredients
4 boneless, skinless chicken breasts
1/4 cup olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh oregano, chopped
1 teaspoon salt
1 teaspoon black pepper
1/2 cup kalamata olives, pitted and halved
1/3 cup sun-dried tomatoes, chopped
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Instructions
1. Preheat oven to 375°F.
2. In a small bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, oregano, salt, and pepper.
3. Place chicken breasts in a baking dish and pour the herb mixture over them, turning the chicken to coat evenly.
4. Scatter olives and sun-dried tomatoes over the chicken.
5. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink inside.
6. Sprinkle feta cheese and parsley over the chicken before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
