Ingredients

4 cod fillets (6 oz each)
2 cups cherry tomatoes, halved
1/2 cup pitted Kalamata olives, sliced
2 tablespoons capers
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 teaspoon dried oregano
1/4 cup extra virgin olive oil
1 lemon, juiced
Salt and pepper to taste

Instructions

1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
2. Arrange the cod fillets in the baking dish and season with salt and pepper.
3. In a bowl, combine cherry tomatoes, olives, capers, garlic, and parsley. Add oregano and half of the lemon juice, and mix well.
4. Pour the tomato and olive mixture over the cod fillets, ensuring they are well covered.
5. Drizzle the olive oil evenly over the top.
6. Bake in the preheated oven for 20-25 minutes, or until the cod is opaque and flakes easily with a fork.
7. Remove from the oven and drizzle with the remaining lemon juice before serving.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a 350°F oven for 10-15 minutes until warm, or microwave on medium power for 1-2 minutes.
