Ingredients
1 1/2 cups all-purpose flour
1 cup granulated sugar
2 tsp matcha powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
2 large eggs
1 cup buttermilk
1 tsp vanilla extract
2 ripe mangoes, peeled and diced
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup heavy cream
1 tbsp lime juice
Instructions
1. Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
2. In a bowl, whisk together flour, sugar, matcha powder, baking powder, baking soda, and salt.
3. In another large bowl, beat butter until creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
4. Gradually add dry ingredients to the wet mixture, alternating with buttermilk. Beat until smooth.
5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
6. Let cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
7. For the filling, beat cream cheese and powdered sugar until smooth. Add heavy cream and lime juice, beating until fluffy.
8. Fold in diced mangoes gently into the cream mixture.
9. Once cakes are cooled, spread the mango filling between the layers and on top.
10. Chill the cake in the refrigerator for at least 2 hours before serving.
Storage
Store the cake in an airtight container in the refrigerator for up to 3 days.
Reheating
Allow a slice to sit at room temperature for 15 minutes before serving to retain its creamy texture.
