Ingredients
1 package active dry yeast
1 tsp sugar
3/4 cup warm water
2 cups all-purpose flour
1/2 tsp salt
1 tbsp olive oil
8 oz fresh mozzarella cheese, sliced
2 ripe tomatoes, sliced
1/4 cup fresh basil leaves
1/4 tsp salt
1/4 tsp black pepper
1 tbsp olive oil for brushing
Instructions
1. In a small bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix well until a dough forms.
3. Knead the dough on a lightly floured surface for about 6-8 minutes, until smooth.
4. Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise for about 1 hour or until doubled in size.
5. Preheat oven to 475°F (245°C).
6. Punch down the dough, then roll it out on a floured surface to your desired thickness.
7. Place the rolled dough on a pizza stone or baking sheet lined with parchment paper.
8. Brush the surface with olive oil, then layer with mozzarella slices and tomato slices.
9. Sprinkle with salt and pepper.
10. Bake in preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbly.
11. Remove from oven, scatter fresh basil leaves on top, slice, and serve.
Storage
Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the pizza slices on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10 minutes or until heated through.
