Maple Pecan Sweet Potato Casserole

A twist on a classic, this Maple Pecan Sweet Potato Casserole combines the natural sweetness of sweet potatoes with a crunchy pecan topping, infused with maple syrup for a delightful holiday side dish.

Ingredients

3 lbs sweet potatoes, peeled and cubed
1/2 cup maple syrup
1/4 cup unsalted butter, melted
1/2 cup milk
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
2 large eggs
1 cup pecans, chopped
1/4 cup brown sugar
2 tbsp all-purpose flour
2 tbsp melted butter

Instructions

1. Preheat your oven to 350°F (175°C) and grease a baking dish.
2. Boil the sweet potatoes until tender, about 20 minutes, and then drain.
3. In a large bowl, mash the sweet potatoes and stir in maple syrup, melted butter, milk, vanilla extract, cinnamon, nutmeg, and salt.
4. Beat in the eggs one at a time until fully incorporated.
5. Transfer the sweet potato mixture into the prepared baking dish and smooth the top.
6. For the topping, combine pecans, brown sugar, flour, and melted butter in a small bowl.
7. Sprinkle the pecan mixture evenly over the sweet potatoes.
8. Bake in the preheated oven for 30 minutes or until the topping is golden and crunchy.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, warm in a preheated oven at 350°F (175°C) for about 10-15 minutes until heated through or microwave individual portions for 1-2 minutes.
