Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
2 large eggs
1/3 cup maple syrup
4 ripe bananas, mashed
1 tsp vanilla extract
1/2 cup chopped pecans
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a large bowl, sift together the flour, baking soda, and salt. Set aside.
3. In another bowl, cream the butter and brown sugar until smooth.
4. Stir in the eggs one at a time, followed by the maple syrup and mashed bananas.
5. Add the vanilla extract and mix until well combined.
6. Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
7. Gently fold in the chopped pecans.
8. Pour the batter into the prepared loaf pan and smooth the top.
9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Store the banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.

To reheat, warm slices in a toaster oven at 300°F for about 5 minutes or microwave for 20-30 seconds.
