Ingredients

10 cups popped popcorn
1 cup roasted mixed nuts (such as almonds, pecans, and cashews)
1 cup packed brown sugar
1/2 cup unsalted butter
1/4 cup maple syrup
1/4 cup light corn syrup
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt

Instructions

1. Preheat your oven to 250°F (120°C) and line a large baking sheet with parchment paper.
2. Place the popped popcorn and mixed nuts in a large mixing bowl and set aside.
3. In a saucepan over medium heat, combine the brown sugar, butter, maple syrup, and corn syrup. Stir constantly until the mixture begins to boil.
4. Once boiling, allow it to cook without stirring for 4-5 minutes until it reaches a deep amber color.
5. Remove from heat and quickly stir in the vanilla extract, baking soda, and salt. The mixture will bubble up and become frothy.
6. Immediately pour the caramel mixture over the popcorn and nuts, and stir well to coat evenly.
7. Spread the caramel-coated popcorn mixture onto the prepared baking sheet.
8. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even coating and baking.
9. Remove from the oven and let it cool completely on the baking sheet.
10. Once cooled, break into pieces and serve or store.

Storage

Store in an airtight container at room temperature for up to 1 week.

Reheating

To reheat, spread on a baking sheet and warm in a preheated 250°F (120°C) oven for 5-10 minutes until crisp.
