Ingredients
2 lbs carrots, peeled and cut into sticks
2 tbsp olive oil
3 tbsp maple syrup
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
1 tsp salt
1/2 tsp black pepper
1 tbsp chopped fresh parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, apple cider vinegar, salt, and black pepper.
3. Add carrot sticks to the bowl and toss to coat evenly.
4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
6. Remove from oven and transfer to a serving dish.
7. Garnish with chopped fresh parsley before serving.
Storage
Store leftover roasted carrots in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through.
