Maple-Infused Pumpkin Puree

Ingredients
2 small sugar pumpkins
1/4 cup maple syrup
1 tbsp olive oil
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
Instructions
1. Preheat your oven to 375°F.
2. Cut the sugar pumpkins in half and scoop out the seeds.
3. Rub the flesh with olive oil, then sprinkle with cinnamon, nutmeg, and salt.
4. Place the pumpkin halves cut-side down on a baking sheet.
5. Roast in the oven for 45-60 minutes until the flesh is tender.
6. Allow to cool, then scoop out the flesh into a food processor.
7. Add maple syrup and blend until smooth.
Storage
Store the puree in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Reheating
Reheat gently in a saucepan over low heat, stirring occasionally.
