Ingredients

1 cup sugar
1/2 cup brown sugar
1/2 cup unsalted butter, softened
2 large eggs
1 1/2 cups canned pumpkin puree
1/3 cup maple syrup
1/4 cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 cup chopped pecans

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, cream together the sugar, brown sugar, and butter until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Mix in the pumpkin puree, maple syrup, milk, and vanilla extract.
5. In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
6. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
7. Fold in the chopped pecans.
8. Pour the batter into the prepared loaf pan and smooth the top.
9. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days.

Reheating

To reheat, slice the bread and warm in a preheated 300°F oven for 5-10 minutes or microwave individual slices for 15-20 seconds.
