Ingredients
1 1/2 lbs pork tenderloin
1/4 cup pure maple syrup
2 tbsp Dijon mustard
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 lb baby carrots
1 lb Brussels sprouts, halved
1 red onion, sliced
1/2 tsp dried thyme
1/4 tsp cinnamon
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix the maple syrup, Dijon mustard, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper.
3. Rub the pork tenderloin with the maple syrup mixture and marinate for at least 15 minutes.
4. In a large bowl, toss the baby carrots, Brussels sprouts, and red onion with olive oil, dried thyme, cinnamon, 1/2 tsp salt, and 1/4 tsp black pepper.
5. Place the pork tenderloin on a baking sheet and surround it with the vegetable mixture.
6. Roast in the preheated oven for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
7. Let the pork rest for 5 minutes before slicing and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through.
