Ingredients
3 lbs sweet potatoes
1/2 cup maple syrup
1/4 cup bourbon
1/4 cup unsalted butter
1/2 cup brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1 tsp vanilla extract
1/2 cup chopped pecans

Instructions
1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with cooking spray.
2. Peel and slice the sweet potatoes into 1/4-inch thick rounds and arrange them in the prepared baking dish.
3. In a small saucepan over medium heat, combine the maple syrup, bourbon, butter, brown sugar, cinnamon, nutmeg, and salt. Stir until the butter is melted and the mixture is smooth.
4. Remove the saucepan from heat and stir in the vanilla extract.
5. Pour the maple bourbon mixture evenly over the sweet potatoes, ensuring they are well coated.
6. Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
7. Remove the foil, sprinkle the chopped pecans over the sweet potatoes, and bake for an additional 15 minutes, or until the sweet potatoes are tender and the top is caramelized.
8. Let cool slightly before serving.

Reheating
Reheat in the microwave on medium heat for 2-3 minutes or until heated through, or in a preheated 350°F (175°C) oven for 10-15 minutes.
