Ingredients
4 lbs beef short ribs
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
1/2 cup pure maple syrup
1/2 cup balsamic vinegar
2 cups beef broth
2 tbsp tomato paste
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 bay leaves
Instructions
1. Preheat your oven to 325°F (165°C).
2. Heat olive oil in a large Dutch oven over medium-high heat. Brown the short ribs on all sides, then remove and set aside.
3. In the same pot, add onion and garlic; sauté until softened.
4. Stir in the maple syrup, balsamic vinegar, beef broth, tomato paste, thyme, salt, and pepper. Bring to a simmer.
5. Return the short ribs to the pot, add bay leaves, cover, and transfer to the oven.
6. Braise for 2.5 to 3 hours or until the ribs are tender and the sauce has thickened.
7. Remove bay leaves before serving.
Storage
Store cooled short ribs in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a covered baking dish at 325°F (165°C) for about 20-25 minutes, or until heated through.
