Ingredients
1 lb elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1 cup shredded Gruyère cheese
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1/4 cup grated Parmesan cheese for topping
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
2. Cook the macaroni according to package instructions until al dente, then drain and set aside.
3. In a large saucepan, melt the butter over medium heat. Add flour and whisk continuously for about 1 minute to create a roux.
4. Gradually whisk in the milk and heavy cream, cooking until the mixture thickens, about 3-4 minutes.
5. Stir in the cheddar and Gruyère cheese, allowing them to melt completely. Add the salt, black pepper, and cayenne pepper.
6. Combine the cheese sauce with the cooked macaroni, mixing until well coated, then transfer to the prepared baking dish.
7. Sprinkle the Parmesan cheese on top and bake for 20-25 minutes until golden and bubbly.
8. Let it cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-15 minutes or until heated through. Alternatively, microwave on medium power for about 2-3 minutes.
