Lucky Southern New Year Feast

Celebrate the New Year with a hearty Southern feast, featuring a symphony of comforting flavors that evoke warmth and prosperity. This dish combines traditional ingredients believed to bring good luck and good fortune throughout the year.

Ingredients

4 lbs pork shoulder
2 tsp salt
1 tsp black pepper
1 tbsp olive oil
1 large yellow onion, chopped
4 cloves garlic, minced
2 cups chicken broth
2 tbsp apple cider vinegar
1 tbsp brown sugar
1 tsp smoked paprika
1/2 tsp cayenne pepper
2 cups collard greens, chopped
2 cups black-eyed peas, cooked
1 cup long-grain white rice
1/4 cup green onions, sliced
1/4 cup fresh parsley, chopped

Instructions

1. Preheat oven to 300°F.
2. Season the pork shoulder with salt and pepper.
3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork shoulder on all sides until browned, about 4 minutes per side.
4. Remove the pork and set aside. In the same pot, add chopped onions and cook until translucent, about 5 minutes.
5. Stir in minced garlic, chicken broth, apple cider vinegar, brown sugar, smoked paprika, and cayenne pepper. Bring to a simmer.
6. Return the pork shoulder to the pot, cover, and transfer to the preheated oven. Cook for 3 to 4 hours until the meat is tender and easily pulls apart.
7. In the last 30 minutes of cooking, add collard greens and black-eyed peas to the pot.
8. Cook rice according to package instructions.
9. Once the pork is ready, shred it with two forks and mix with the greens and peas in the pot.
10. Serve the dish over a bed of rice, garnished with green onions and parsley.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, or microwave on high for 2-3 minutes.
