Lentil and Sweet Potato Soup

A hearty Lentil and Sweet Potato Soup that combines nutritious lentils with the sweetness of potatoes and the warmth of spices. Perfect for a quick healthy meal.

Ingredients

1 cup dried brown lentils
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 medium sweet potatoes, peeled and diced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon ground cinnamon
4 cups vegetable broth
2 cups water
Salt and pepper to taste
Juice of 1 lemon
1/4 cup chopped fresh parsley

Instructions

1. Rinse the lentils thoroughly under cold water.
2. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until soft.
3. Stir in diced sweet potatoes, cumin, smoked paprika, and cinnamon, cooking for an additional 2 minutes.
4. Add lentils, vegetable broth, and water. Bring the mixture to a boil.
5. Reduce heat to a simmer and cook for 30-35 minutes until lentils and sweet potatoes are tender.
6. Season with salt, pepper, and lemon juice.
7. Stir in fresh parsley before serving.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in a pot over medium heat until warmed through, or microwave in a bowl for 2-3 minutes, stirring halfway.
