Lentil and Sausage Soup

This hearty Lentil and Sausage Soup is a deliciously wholesome combination of protein-packed lentils, savory sausage, and fresh vegetables simmered in a flavorful broth. Perfect for a cozy family dinner.

Ingredients

1 tablespoon olive oil
1 pound sausage (Italian or your choice), sliced
1 large onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 bay leaf
1 cup dried green lentils
8 cups chicken broth
1 can (14.5 oz) diced tomatoes
Salt and pepper to taste
2 cups baby spinach leaves
1 tablespoon lemon juice
Fresh parsley, chopped for garnish

Instructions

1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove sausage and set aside.
2. In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes.
3. Add garlic, thyme, smoked paprika, and bay leaf. Stir for 1 minute until fragrant.
4. Pour in lentils, chicken broth, and diced tomatoes. Stir well and bring to a boil.
5. Reduce heat to low, cover, and let simmer for 30 minutes or until lentils are tender.
6. Stir in cooked sausage, baby spinach, and lemon juice. Simmer for an additional 5 minutes.
7. Season with salt and pepper to taste. Remove bay leaf before serving.
8. Garnish with fresh parsley and serve hot.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over low heat or in the microwave until hot throughout.
