Lemon Zest Vanilla Cake

Ingredients

2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, softened
4 large eggs
1 cup whole milk
2 teaspoons pure vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt
Zest of 1 lemon

Instructions

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Mix in the vanilla extract and lemon zest.
5. In another bowl, whisk together the flour, baking powder, and salt.
6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
7. Divide the batter evenly between the prepared pans and smooth the tops.
8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
9. Allow cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, warm slices in the microwave for 10-15 seconds or serve at room temperature.
