Ingredients

Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin tin with paper liners.
2. In a large bowl, cream together the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition.
4. Stir in the vanilla extract.
5. In a separate bowl, whisk together flour, baking powder, and salt.
6. Gradually add the dry ingredients to the creamed mixture, alternating with milk, until just combined.
7. Gently fold in the lemon zest and blueberries tossed in 1 tablespoon of flour to prevent sinking.
