Ingredients

1 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/4 cup lemon juice
1 tablespoon lemon zest
1 cup shelled pistachios, finely chopped
1 1/2 cups confectioners' sugar
2 tablespoons lemon juice (for glaze)
1/4 cup pistachios, chopped (for garnish)

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Stir in the vanilla extract.
5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
7. Mix in the lemon juice, lemon zest, and chopped pistachios until just combined.
8. Pour the batter into the prepared cake pan and smooth the top.
9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
10. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
11. To make the glaze, whisk together the confectioners' sugar and lemon juice until smooth.
12. Drizzle the glaze over the cooled cake and sprinkle with additional chopped pistachios for garnish.

Storage

Store the cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Reheating

Reheat individual slices in the microwave for 10-15 seconds on a low setting to slightly warm.
