Ingredients
1 cup fresh basil leaves
0.5 cup fresh mint leaves
0.5 cup grated Parmesan cheese
0.25 cup pine nuts
2 cloves garlic
0.5 cup olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
1. Combine basil leaves, mint leaves, Parmesan cheese, pine nuts, and garlic in a food processor.
2. Pulse until the mixture is coarsely ground.
3. While the processor is running, gradually add olive oil in a steady stream until the pesto reaches the desired consistency.
4. Stir in lemon juice, and season with salt and pepper to taste.
Storage
Store in an airtight container in the refrigerator for up to one week.
Reheating
Let stand at room temperature for 10 minutes before using or gently reheat in a pan over low heat.
