Ingredients
2 Cornish hens (about 1.5 lbs each)
2 tablespoons olive oil
1 lemon, thinly sliced
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chicken broth
Instructions
1. Preheat your oven to 375°F (190°C).
2. Rinse and pat dry the Cornish hens with paper towels.
3. Rub the hens with olive oil, making sure to coat them evenly.
4. Season the hens inside and out with salt and black pepper.
5. Stuff the cavity of each hen with lemon slices, minced garlic, rosemary, and thyme.
6. Place the hens breast side up in a roasting pan.
7. Pour chicken broth into the pan to keep the hens moist.
8. Roast in the preheated oven for 50 to 60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
9. Remove from the oven and let rest for 5 minutes before serving.

Reheating
Reheat in a preheated oven at 350°F (175°C) until heated through, about 15-20 minutes.
