Lemon Herb Chicken Noodle Soup

Ingredients

1 lb chicken breast
8 cups chicken broth
2 tbsp olive oil
1 cup diced carrots
1 cup diced celery
1 cup diced onions
3 cloves garlic, minced
1 cup egg noodles
1 lemon, juiced and zested
1 tbsp fresh thyme
1 tbsp fresh parsley
1 tsp salt
1/2 tsp black pepper

Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery, sauté until onions are translucent.
2. Stir in minced garlic and cook for another minute.
3. Add chicken broth and bring to a boil.
4. Add chicken breast to the pot, reduce heat, and simmer until cooked through (about 20 minutes). Remove chicken, shred it, and return to the pot.
5. Stir in egg noodles, lemon juice, lemon zest, thyme, parsley, salt, and pepper. Simmer until noodles are tender (about 10 minutes).
6. Adjust seasoning to taste and serve hot.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over medium heat until heated through, or microwave on medium power in a microwave-safe container.
