Ingredients
2 lbs boneless skinless chicken breasts
1/2 cup all-purpose flour
1/4 cup olive oil
1/2 cup Marsala wine
1 cup chicken broth
1/4 cup fresh lemon juice
2 tbsp capers
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
2 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
Instructions
1. Pound the chicken breasts to an even thickness.
2. Season the chicken with salt, pepper, dried oregano, and dried thyme.
3. Dredge the chicken in flour, shaking off the excess.
4. Heat olive oil in a large skillet over medium-high heat.
5. Cook the chicken for about 4 minutes on each side until golden brown.
6. Remove the chicken and set aside.
7. In the same skillet, add garlic and sauté for 1 minute.
8. Pour in Marsala wine and chicken broth, scraping up any browned bits.
9. Stir in lemon juice and capers, and let it simmer for 5 minutes.
10. Return the chicken to the skillet and cook for another 5 minutes until cooked through.
11. Garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, warm in a skillet over medium heat until heated through or microwave for 2-3 minutes.
