Ingredients
4 lbs bone-in chicken thighs
2 tbsp olive oil
1 cup chicken broth
1 cup heavy cream
1 lemon (zested and juiced)
4 cloves garlic (minced)
1/2 cup fresh parsley (chopped)
1/4 cup fresh thyme leaves
1/4 cup fresh basil (chopped)
1 large onion (diced)
1 tsp salt
1/2 tsp black pepper
1/4 cup all-purpose flour
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and black pepper. Sear the chicken until golden brown on both sides.
2. Remove the chicken from the skillet and set aside. Add diced onions and minced garlic to the skillet and sauté until translucent.
3. Stir in flour and cook for another minute. Gradually whisk in chicken broth and bring to a simmer.
4. Return chicken to the skillet, cover, and simmer for 20 minutes.
5. Stir in heavy cream, lemon zest, and lemon juice. Add fresh parsley, thyme, and basil. Simmer for another 10 minutes until the sauce thickens and chicken is fully cooked.
6. Serve warm with your choice of side, garnished with additional herbs.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat the chicken fricassee in a skillet over low heat until heated through, adding a splash of broth if needed to maintain sauce consistency.
