Lemon Ginger Chicken Soup

Ingredients

1 whole chicken (about 3-4 lbs)
8 cups water
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 inches fresh ginger, peeled and sliced
2 large carrots, peeled and chopped
3 celery stalks, chopped
1 lemon, juiced and zested
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions

1. In a large pot, heat olive oil over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
2. Add the whole chicken to the pot and pour in water. Bring to a boil, then reduce heat to simmer for 45 minutes.
3. Remove chicken from pot. Once cool enough to handle, shred the meat and return it to the pot.
4. Add carrots, celery, lemon juice, and zest. Simmer for an additional 20 minutes or until vegetables are tender.
5. Season with salt and pepper to taste. Stir in fresh parsley before serving.

Storage

Allow soup to cool completely. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

To reheat, transfer soup to a pot and warm over medium heat until heated through. Alternatively, reheat in the microwave on high for 2-3 minutes.
