Lemon Ginger Chicken Noodle Soup

Ingredients

1.5 lbs boneless chicken thighs
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 large carrots, sliced
1 rib celery, sliced
8 cups chicken broth
2 cups egg noodles
1 lemon, juiced and zested
1/4 cup fresh parsley, chopped
Salt and pepper to taste
1 tsp turmeric

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion, garlic, and ginger, sauté until fragrant.
3. Add chicken thighs, cook until browned on all sides.
4. Pour in chicken broth and bring to a boil.
5. Add carrots, celery, turmeric, salt, and pepper; reduce heat and simmer for 15 minutes.
6. Remove chicken, shred, and return to the pot.
7. Stir in egg noodles, cooking until tender.
8. Add lemon juice, zest, and parsley; adjust seasoning.
9. Serve hot garnished with extra parsley if desired.

Storage
