Lemon Blueberry Loaf

Ingredients
1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 tbsp lemon zest
1/2 cup milk
1 tsp vanilla extract
1 cup fresh blueberries
Instructions
1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
2. In a bowl, mix flour, baking powder, and salt.
3. In a separate bowl, cream butter and sugar until light and fluffy.
4. Add eggs and lemon zest to the butter mixture, and beat well.
5. Gradually add dry ingredients to the wet mixture alternately with milk, starting and ending with dry ingredients.
6. Stir in vanilla extract and gently fold in blueberries.
7. Pour the batter into the prepared loaf pan.
8. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Reheating
Reheat slices in a toaster oven at 300°F for 5-7 minutes or until warmed through.
