Ingredients
2 cups fresh blueberries
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine the blueberries, lemon juice, lemon zest, and 1/4 cup of the sugar. Toss to coat the blueberries evenly, then set aside.
3. In a separate bowl, whisk together the flour, remaining sugar, baking powder, and salt.
4. Stir in the melted butter, milk, and vanilla extract to form a smooth batter.
5. Pour the batter into a greased 9x9-inch baking dish.
6. Spread the blueberry mixture evenly over the batter.
7. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
8. Let the cobbler cool for at least 10 minutes before serving.
