Ingredients

1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tbsp lemon zest
1/4 cup fresh lemon juice
1 tsp vanilla extract
1 cup blackberry puree
1/4 cup confectioners sugar
1 tbsp cornstarch

Instructions

1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter and press into the bottom of the pan.
3. In a large bowl, beat cream cheese until smooth, then add sugar gradually.
4. Add eggs one at a time, mixing well after each addition.
5. Stir in lemon zest, lemon juice, and vanilla extract.
6. Pour half the cream cheese mixture over the crust.
7. In a separate bowl, mix blackberry puree with confectioners sugar and cornstarch.
8. Drop spoonfuls of the blackberry mixture over the cheesecake layer, swirl gently with a knife.
9. Pour the remaining cream cheese mixture on top and swirl remaining blackberry mixture.
10. Bake for 50-60 minutes or until center is set. Cool completely before refrigerating for at least 4 hours.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat slices in the microwave for 10-15 seconds if desired.
