Layered Beef & Black Bean Enchilada Casserole
This Layered Beef & Black Bean Enchilada Casserole offers a delightful twist on the traditional enchilada casserole, incorporating tender beef, hearty black beans, and layers of gooey cheese to create a comforting and satisfying meal.

Ingredients
1 lb ground beef
1 can (15 oz) black beans, drained and rinsed
8 large corn tortillas
2 cups enchilada sauce
2 cups shredded cheddar cheese
1 cup diced tomatoes
1 medium onion, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1 tablespoon olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
3. Add the ground beef to the skillet and cook until browned, breaking it up with a spatula, about 8 minutes. Drain excess fat.
4. Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for another 2 minutes, then remove from heat.
5. Spread 1/2 cup of the enchilada sauce in the bottom of a 9x13 inch baking dish.
6. Place two tortillas over the sauce, slightly overlapping them.
7. Spread half of the beef and bean mixture over the tortillas, followed by 1/2 cup of diced tomatoes, and 1/2 cup of cheese.
8. Pour 1/2 cup of enchilada sauce over the layers.
9. Repeat the layers: tortillas, remaining beef mixture, tomatoes, cheese, and enchilada sauce.
10. Top with the remaining tortillas, enchilada sauce, and cheese.
11. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
12. Let cool for 5 minutes before serving. Garnish with fresh cilantro.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat oven to 350°F (175°C) and bake covered with foil for 15 minutes, or until heated through.
