Lavender-Infused Rice Pudding

Ingredients

3 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1/2 teaspoon culinary lavender
1 cup Arborio rice
1 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon unsalted butter
Lavender buds for garnish (optional)

Instructions

1. In a medium saucepan, combine whole milk, heavy cream, granulated sugar, and culinary lavender. Heat over medium heat until just simmering.
2. Remove from heat and allow lavender to steep for 15 minutes, then strain the mixture to remove the lavender buds.
3. Return the infused milk mixture to the saucepan and add the Arborio rice and salt. Cook over low heat, stirring frequently, until the rice is tender and the mixture has thickened, about 25-30 minutes.
4. Once the rice is cooked, remove from heat and stir in the vanilla extract and unsalted butter until well combined.
5. Allow the pudding to cool slightly before serving. Garnish with lavender buds, if desired.

Storage

Store the rice pudding in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual portions in the microwave or on the stovetop over low heat, adding a splash of milk to restore creaminess.
