Korean Kimchi Stew, or Kimchi Jjigae, is a traditional Korean dish brimming with spicy and savory flavors. This robust stew features fermented kimchi, tender tofu, and juicy pork, offering a comforting and hearty meal that captures the essence of Korean home cooking.

Ingredients

2 cups kimchi
8 oz pork belly, sliced
1 block of tofu, cubed
1 tablespoon vegetable oil
1 large onion, sliced
2 green onions, chopped
2 cloves garlic, minced
1 tablespoon gochugaru (Korean red pepper flakes)
1 tablespoon soy sauce
4 cups water
1 tablespoon sesame oil
Salt, to taste
1 teaspoon sugar

Instructions

1. Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and garlic, and sauté until fragrant.
2. Add the sliced pork belly to the pot and cook until lightly browned.
3. Stir in the kimchi and cook for about 5 minutes until the kimchi softens.
4. Pour in the water and soy sauce, then bring to a simmer.
5. Add the gochugaru and sugar, stirring well to combine.
6. Gently add the cubed tofu, and let the stew simmer for 15 minutes to blend the flavors.
7. Season with salt to taste and stir in sesame oil before serving.
8. Garnish with chopped green onions.

Storage

Store in an airtight container and refrigerate for up to 3 days.

Reheating

Reheat gently on the stovetop over medium heat until thoroughly warmed.
