Kale and Sweet Potato Hash

Ingredients

2 tbsp olive oil
1 large sweet potato, peeled and diced
1 small onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 tsp smoked paprika
Salt and pepper to taste
3 cups kale, chopped
2 large eggs
1/4 cup feta cheese, crumbled (optional)

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add diced sweet potatoes and cook for 10-12 minutes until crispy and golden brown.
3. Stir in chopped onion, minced garlic, and diced red bell pepper; cook for another 5 minutes.
4. Season with smoked paprika, salt, and pepper, and stir well.
5. Add chopped kale to the skillet and cook until wilted, about 3-4 minutes.
6. Make two wells in the hash and crack an egg into each well. Cover the skillet and cook until eggs are set to your liking.
7. Sprinkle with feta cheese if desired, and serve immediately.

Storage

Store any leftover hash in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through, about 5 minutes, or microwave on high for 1-2 minutes.
