Ingredients

1 French baguette
4 medium ripe tomatoes, diced
1/4 cup fresh basil leaves, chopped
2 cloves garlic, minced
3 tablespoons extra virgin olive oil
2 tablespoons balsamic glaze
Salt and pepper to taste

Instructions

1. Preheat the oven to 400°F (200°C).
2. Slice the baguette into 1/2-inch thick slices and place them on a baking sheet.
3. Brush each slice with olive oil and toast in the oven for 5-7 minutes until golden brown.
4. In a medium bowl, combine diced tomatoes, minced garlic, chopped basil, and a pinch of salt and pepper.
5. Spoon the tomato mixture onto the toasted baguette slices evenly.
6. Drizzle with balsamic glaze just before serving.

Storage

Store leftover bruschetta topping in an airtight container in the refrigerator for up to 2 days. Store toasted baguette slices in a sealed bag at room temperature for up to 1 day.

Reheating

Reheat toasted baguette slices in the oven at 350°F (175°C) for 3-5 minutes. Do not reheat the tomato mixture as it is best served fresh.
