Italian Risotto
A classic Italian Risotto, this creamy and decadent dish combines Arborio rice slowly cooked to perfection with a savory broth, enriched with Parmesan cheese and a touch of aromatic saffron. Ingredients
Arborio rice
1.5 cups
Chicken or vegetable broth
6 cups
Unsalted butter
2 tbsp
Olive oil
1 tbsp
Onion, finely chopped
1, medium
Garlic, minced
2 cloves
Dry white wine
0.5 cup
Parmesan cheese, grated
0.75 cup
Saffron threads
0.5 tsp
Salt
to taste
Black pepper
to taste
Fresh parsley, chopped

Instructions
1. In a small bowl, soak the saffron threads in 1/4 cup of warm broth and set aside.
2. In a large saucepan, heat the chicken or vegetable broth over low heat.
3. In a separate large skillet or pot, melt the butter with the olive oil over medium heat.
4. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
5. Stir in the minced garlic and cook for an additional minute.
6. Add the Arborio rice to the skillet, stirring to coat the grains with the butter and oil mixture.
7. Pour in the white wine and cook, stirring constantly, until the wine has evaporated.
8. Begin adding the warm broth, one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
9. After about 15 minutes, stir in the saffron-infused broth.
10. Continue to add broth and stir for another 5-10 minutes, until the rice is creamy and al dente.
11. Remove from heat and stir in the grated Parmesan cheese, season with salt and pepper.
12. Garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place the risotto in a saucepan with a splash of broth over medium heat, stirring until warmed through and creamy.
