Italian Herb Stuffed Zucchini

Ingredients
4 medium zucchinis
1 tbsp olive oil
1/2 cup diced onion
2 cloves garlic, minced
1/2 cup diced tomatoes
1/2 cup cooked quinoa
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tsp Italian seasoning
1/4 cup chopped fresh basil
Salt and pepper to taste
1/4 cup shredded mozzarella cheese
Instructions
1. Preheat oven to 375°F (190°C).
2. Cut zucchinis in half lengthwise and scoop out the flesh, leaving a 1/4-inch shell.
3. Heat olive oil in a pan over medium heat and sauté onions and garlic until softened.
4. Add diced tomatoes and cook for 2-3 minutes until softened.
5. In a bowl, combine sautéed vegetables, quinoa, Parmesan, breadcrumbs, Italian seasoning, basil, salt, and pepper.
6. Stuff zucchini halves with the mixture and place in a baking dish.
7. Sprinkle mozzarella over the stuffed zucchinis.
8. Bake for 25-30 minutes or until zucchinis are tender and cheese is golden brown.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat stuffed zucchinis in an oven preheated to 350°F (175°C) for 10-15 minutes or until heated through.
