Ingredients
12 oz rotini pasta
1 cup cherry tomatoes, halved
1/2 cup black olives, sliced
1/2 red onion, thinly sliced
1/2 cup bell pepper, diced
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/4 cup grated parmesan cheese
1/2 cup Italian vinaigrette
Salt and pepper to taste
Instructions
1. Cook the rotini pasta according to package instructions until al dente, then drain and rinse under cold water.
2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, black olives, red onion, and bell pepper.
3. Add the chopped basil and parsley to the bowl and toss to combine.
4. Pour the Italian vinaigrette over the salad mixture and gently toss until everything is well coated.
5. Season with salt and pepper to taste.
6. Sprinkle grated parmesan cheese over the top before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
This salad is best enjoyed cold and does not require reheating.
