Ingredients

2 lbs of bone-in chicken thighs
1/2 cup all-purpose flour
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, sliced
1 red bell pepper, sliced
8 oz mushrooms, sliced
1 can (28 oz) crushed tomatoes
1/2 cup dry white wine
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes
Salt and pepper to taste
1/4 cup fresh basil leaves, chopped

Instructions

1. Dredge chicken thighs in flour, shaking off excess.
2. Heat olive oil in a large skillet over medium heat.
3. Brown chicken on both sides, about 5 minutes per side, then remove and set aside.
4. In the same skillet, add onion and garlic, sauté until fragrant.
5. Add bell peppers and mushrooms, cook until softened.
6. Pour in crushed tomatoes and white wine, stir in oregano, thyme, red pepper flakes, salt, and pepper.
7. Return chicken to skillet, covering with sauce.
8. Simmer on low heat for 45-50 minutes until chicken is cooked through.
9. Stir in fresh basil before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over low heat, adding a splash of water or stock to loosen the sauce if necessary.
