Ingredients
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1/2 cup honey
1/2 cup fresh lemon juice
2 tablespoons lemon zest
1/4 cup fresh basil leaves, chopped
1/4 teaspoon baking powder
1/4 teaspoon salt
Powdered sugar for dusting
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
2. In a medium bowl, mix together 1 cup of flour and 1/4 cup of granulated sugar. Cut in the softened butter until the mixture resembles coarse crumbs. Press this mixture firmly into the bottom of the prepared pan.
3. Bake the crust in the preheated oven for 15 minutes until lightly golden. Remove from oven and set aside.
4. In another bowl, whisk together 1 cup of granulated sugar, eggs, honey, lemon juice, lemon zest, and chopped basil until well combined.
5. Stir in the baking powder and salt, mixing until smooth.
6. Pour the lemon mixture over the pre-baked crust and return to the oven.
7. Bake for an additional 20-25 minutes, or until the filling is set and the top begins to lightly brown.
8. Remove from oven and allow to cool to room temperature. Once cooled, dust the top with powdered sugar.
9. Cut into bars and serve.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
These bars can be enjoyed cold or at room temperature; reheat for a few seconds in the microwave if desired.
